Hello, I've been building my own kernels since 0.9x versions... and I like stability.
Actually I haven't moved my boots that are still managed by lilo and didn't get time to upgrade to other bootloaders, so debian kernels are not possible at the time. I expect I am not the only one having reached this problem recently, or other will if they go from stable to testing as I did recently on some package, so it would be interresting if you understand what is going on rather than rejecting everything so quickly.
