The machine in question is a fresh install of Sarge from the release
netinst CD.

I don't use sarge. I don't see how this could happen, I've never heard about this happening to anyone else, and my own Gnome terminals are fine. Even if I choose Marlett in them, the text is legible (probably because Pango uses Sans to display the characters that don't exist in Marlett). Downgrading the bug.
