Dear Simon, Indeed; anki 2.0.31+dfsg-1 is not part of the stretch release for this very reason; it worked on jessie (Debian 8), though. I'm therefore closing this bug report. There is currently a working snapshot (a pre-release version of 2.1.6) in unstable, which will be released with buster, all being well. If you want to use Anki with Debian Stretch, I'm afraid you will have to download the precompiled version from the Anki website and run it locally; it is not in the form of a Debian package, but it does include the correct versions of all necessary libraries.
