This one is weird. Diversions aside, there is no way vim-gtk should disappear on installation of vim. vim-gtk depends on vim, and none of its files overlap vim's, except for /usr/bin/vim, which is handled by the diversion.
Can you reproduce this? Is it possible that you installed a *newer* version of vim, which caused vim-gtk to be removed due to a version conflict? -- Thomas
