There is no way to list all the alternatives, other than choosing -all, which then asks on each one. E.g., the user wants to check all the alternatives names with "pdf" in them before picking one to call update-alternatives one. Bad example, as there are none, but you get the idea. Perhaps the best way to learn all the alternatives categories is just $ ls /etc/alternatives But in any case the man page should mention the best way.
