I recently did a test installation of the french debian-education, and fetched the list of installed packages. This is summary of the difference between the installed packages in debian-education (d-e) and the packages available on the Skolelinux CD.
I have not done any proper research on what the differences mean, but here are some random observations. It seem like the Skolelinux CD contains server software, while this is mostly missing from d-e. Skolelinux uses LDAP, while d-e uses NIS. Skolelinux contains translations and dictionaries for several languages, while d-e only use french. Skolelinux includes LTSP, emacs21 (instead of xemacs21). Anyway, here is the package summary.
