I am quite sure this is not a bug in the automount configuration.  It is
supposed to try to mount when someone access paths under /skole/, and fail
if the paths used are bogus.  The question is really why is something trying
to access /skole/tjener/openoffice/, not why automount complains about it.

Given the name, I suspect it is openoffice itself going throught some
autodetection process, and looking for ../openoffice/ in the users home
directory.

Creating the directories manually is a bad idea, as it will confuse the
automounter, which should have complete control over the /skole/ subtree.
