The usual way to do this is

dh_strip --dbg-package=$package-dbg

However, this requires, that the dpg-package is listed in debian/control
to be built. There is an easier way for you:

You can simply pass DEB_BUILD_OPTIONS="nostrip" to
debuild/dpkg-buildpackage. This will prevent dh_strip from stripping the
binaries. Install these packages and create the backtrace.
