You don't need to use EUI-64 ... at least for servers you should not use
EUI-64, as it will change with a new NIC.

Well houneslty I don't understand the point in general of using EUI-64 addresses
as static ones. Aren't they supposed to be automatically generated/assigned when
autoconf is enable and there is a router on the net sending router-advertise out?
without taking into account that a net card change creates more admin work like
updating the dns, firewalls, etc... IMO in this case is really not a good idea.
