Because Postfix is simpler, therefore easier to audit and trust. It runs less stuff as root. It isn't a fight to make it run chrooted (and even does so as default in Debian) and generally is trivial to make it do stupid mta tricks. After installing it on a couple play machines, it was the obvious replacement for sendmail... fast, trustworthy, and a pleasure to play with. (The code is actually understandable!) Oh, and I'd trust Wietse with a root shell on any of my machines.
