My desktop runs sid. But as long as your kernel is the one from the current stable, just cowbuilder (or even pbuilder) or sbuild is enough. With cowbuilder, you can also test the packages, as long as you manage to get $DISPLAY in the throwaway chroot (--login without --save-after-login) set correctly (either bind-mount /tmp/.X11-unix or diddle with xauth), if they absolutely don’t work on your regular system.
