I recreated the initrd:
# update-initramfs -c -k 6.1.0-26-amd64

After reboot the same kernel panic appears. So probably the problem is not with
broken file during the package installation.

Did you got an error while updating the new linux-image package while
updating the initrd? How many linux-image packages have you left
installed? How much space you have in /boot? What happens if you
run update-intramfs update for 6.1.0-26 again?
