Hi, I had got similar problem for having "permission denied" problem in the live-cd.
My work around is to change the nfs script: "/usr/share/initramfs-tools/scripts/nfs", replace "nfsmount" to "mount -t nfs". I used nfs-user-server instead the kernel one. In my distro the first start of daemon is a kernel-opss I suppose that the mix of unionfs, squashfs and other tools don't like nfs. I atach gzipped dmesg output of livecd boot into vmplayer. If I restart nfs-kernel-server all seems to work correctly...
