--include-chroot includes files from your host system into the live system.
--include-image includes files from your host system on the live cd
itself, *not* the live system.
IOW --include-chroot is used for things like config files and scripts
that you want to put on the actual live system (the squashfs image),
whereas --include-image is used for things like readmes and
documentation that can be read off the disc like a normal file.
