if you build an etch distribution on a sid system, your etch squashfs
image would get build with the mksquashfs from sid.

by building the binary image inside the chroot makes the build self
contained; and avoiding any possible messup with to new (or in the other
direction, to old) software and their changes/incompatibilities etc.
