we're using the same 'boot menu' type as d-i does, on purpose. the d-i one does not have a timeout, so debian-live images will have no timeout either.
If you want a timeout on the prebuilt and official images, please discuss this with the d-i people and we'll adapt if they change. As a workaround, you can build your own image, see live-manual for more information on how to do this.
