You may have misunderstood the purpose of --apt aptitude option. This is a less-exercised branch of the live-build code that uses aptitude to do the installs during the build. This doesn't influence whether or not aptitude is included on the image. If it's not working for you, please try the default --apt apt (which I see you did for your next build, http://cgi.build.live-systems.org/build/20151122.115648.597122610/build ...
