Sheesh, the debuild manpage doesn't know anything about that option.
Since I'm using sbuild, I had to dig into the debuild sources to
understand the magic behind it.
So, for posterity:
subild --debbuildopt=-v${unstable_version}~ ...
does the trick. At least for that scenario.
