I've just commited a script Mehdi and I have been working on today. It basically looks at the contributors of the 5 last changelog entries, and updates debian/control accordingly.
It's a draft and probably needs improvement. Currently, it is installed as /usr/bin/ocaml-pkg-update-uploaders (we should probably find a better name), and is meant to be invoked at the toplevel of the package (where debian/changelog exists).
