The solution to that is multibuild, it just isn't ready yet. When it is, I think it's safe to assume that debhelper will learn how to drive it, pretty quickly. It'll also improve a bunch of other situations where dh doesn't handle debian-python's needs (e.g. autotools packages). In the meantime, doing it by hand with overrides really isn't that hard or fragile.
