The diffs are maintained in subversion. http://svn.debian.org/wsvn/collab-maint/ext-maint/wireshark/tags/1.0.8-1/#_ext-maint_wireshark_tags_1.0.8-1_ I think 1.0.8-1 would be the right version to be included in stable, because 1.0.8-2 added a dependency that made the whole package unusable.
