FYI: The status of the sylpheed source package
in Debian's testing distribution has changed.

  Previous version: 3.4.0~beta7-1
  Current version: 3.4.0-1

Seems I failed to prevent the above despite https://bugs.debian.org/743749

Can anyone explain me what happened

sylpheed migrated to testing in the britney run that started at 22:00UTC on Saturday night; it was already in testing by the time you filed the bug.

(Note that the list of RC bugs in testing / unstable is produced for britney by the BTS four times a day, so even filing the bug a few hours earlier would not have sufficed; it would need to have been filed before 1800UTC.)

and what should I have done instead?

Invent a time machine. :-)
