The only installed theme was "/usr/share/icons/Industrial/cursor.theme" (as shown by update-alternatives). I switched to "/etc/X11/cursors/core.theme" after installing xcursor-themes. There are many, many other themes if you install for example chameleon-cursor-theme, comixcursors and crystalcursors. I checked some of them and sometimes the crosshair is almost usable for gnuplot.
