Se quer apenas excluir as linhas do grub sem apagar as antigas imagens.
Utilizando o editor de sua preferência, edite /boot/grub/menu.lst (ex: vi
/boot/grub/menu.lst)
Apague ou comente os as linhas que fazem referencia a seu antigo Kernel,
salve o arquivo e saia.

Sim, pode. Primeiro tenha certeza de ter dado boot com o kernel mais
recente. Depois:
$ dpkg -l | grep linux-image
Veja o nome do pacote que vc quer remover.
# apt-get remove pacote
