Que yo sepa tambien se reininicia como un demonio normal, por tanto para que
te tenga actualizado el sistema solo tienes que arrancar el demonio, sin
hacer falta reiniciar la maquina.
Usage: /etc/init.d/ntpdate {start|stop|restart|force-reload}
Asi que pienso que es una tonteria muy grande tenerlo en el cron
