I don't really understand what you mean. RFC822 says that

        Note:  The "Return-Path" field is added by the mail  transport
               service,  at the time of final deliver.  It is intended
                         ^^^^^^^^^^^^^^^^^^^^^^^^^^^^
               to identify a path back to the orginator  of  the  mes-
               sage.   The  "Reply-To"  field  is added by the message
               originator and is intended to direct replies.

so you can't mean that I should set 

(setq mail-default-headers
        "From: Joe User <[EMAIL PROTECTED]>\nReturn-Path: <[EMAIL PROTECTED]")

because that isn't added at the final deliver of the mail, but at it's start.
Or do you mean this?
