Ah, I forgot about the rod/cone resolution difference. As for the iris opening wider -- I suspect that the overall lighting of the room you're in has a greater effect than the coloring of the page; that would seem to be why my vision specialist recommended a brightly lit room, *not* just a local bright light on the page, for reducing eyestrain while reading. I could of course be wrong :-)
