I just noticed the following in one such header:

    Return-path: <>

Is is possible that a daemon would honor the Return-path (RFC 2821)?  I've noted that Netscape 7.1 at least doesn't, but it's a mail client and not a server...
3.8.4 Other Header Fields in Gatewaying The gateway MUST ensure that all header fields of a message that it forwards into the Internet mail environment meet the requirements for Internet mail. In particular, all addresses in "From:", "To:", "Cc:", etc., fields MUST be transformed (if necessary) to satisfy RFC 822 syntax, MUST reference only fully-qualified domain names, and MUST be effective and useful for sending replies. The translation algorithm used to convert mail from the Internet protocols to another environment's protocol SHOULD ensure that error messages from the foreign mail environment are delivered to the return path from the SMTP envelope, not to the sender listed in the "From:" field (or other fields) of the RFC 822 message.

Set the From address to [EMAIL PROTECTED].  Set the Reply-To address to [EMAIL PROTECTED].  Set up an IMail rule to delete any message sent to [EMAIL PROTECTED].  This way, if an end-user wants to reply, it should work unless they draft a new message and ignore the reply-to address.  I suppose you could also just use a non-existant address so replies would be bounced back, but there should be no bounces to the null sender.

It might be worth a try, but I don't think it will work.  Most bounce messages will normally go to the return address (in the SMTP envelope), regardless of what the Reply-To: is set to.
