You dont want to skip virus scanning but you can easily make it bypass your spam filter files by creating a filter than runs first and looks for attachments in order to stop additional filtering. Here are some lines from my spam "bypass" filter to look for PDFs. Sadly enough I found one company whose application sends them with the file information in the header...

BODY   STOPALLTESTS CONTAINS .PDF
HEADERS  STOPALLTESTS CONTAINS .PDF
BODY  STOPALLTESTS CONTAINS Content-Type: application/pdf
