There is limited ability to change this - I think what you want is Right Click Task bar/Properties/Start Menu/Customise/Advanced/ and check/uncheck "Scroll programs" or Right click Start button/properties/Customise/Advanced
note you have to scroll down quite a way to see the "Scroll programs" check box. This determines if you get several columns or one vertical column that scrolls. Once the All programs columns completely fill the screen (as I got to), the only option to see all is to turn on scroll so you can see the top and bottom entries. But its slow to scroll.
