Once again: DO *NOT* USE THE STAFF PROPERTIES DIALOG! THIS IS A SEPARATE COMMAND! Look at Staffs/Voices -> Staff Properties -> Instrument Name (directly in the Staff Properties submenu, *not* in the Built-in Staff Properties dialog.
