I am unsure of the method in which you are resizing the window. I would like to reproduce this but can't. I have upgraded gtk and hope that this issue has been fixed.
Here is a snapshot of the current git with an upgrade gtk: http://denemo.org/~jjbenham/gub/uploads/denemo-0.0.0-0.darwin-x86.tar.bz2 I hope it fixed the issue. I know you also mentioned changing the keybindings also. For the most part I think mac users would expect apple-z for undo apple-c for copy apple-v for paste apple-x for cut apple-q for quit apple-p for print Any others?
