well, actually ultra-orthodox. Until the 20th c rests were indicated by
a series of little black rectangles - "church rests", and LilyPond
defaults to the "golden age" of music engraving. Even in the 17th
century, though, the typesetters were writing a number above the rests
so you didn't have to actually count up the number of blobs.

Command: Multi-Measure Rest Expand Limit
In Multi-Measure rests: controls how many measures rest are notated as
church rests before numbers are used.
Location: Object Menu ▶ Directives ▶ Typesetter
Internal Name: MMRExpandLimit

is what you have missed (I got there by putting "multi-measure rests"
into the Command Center ...)
