Usually the word "snip" in e-mail messages means that the author of the
message has deleted a part of the e-mail he is quoting (replying to), most
likely because he or she does not think the deleted text was relevant or
necessary to include in the reply.

This is helpful because it indicates that something has been cut away, while
the "snipping" itself helps keeping the e-mail thread less cluttered
(confusing, disorganized) and more to the point.
