Another reason is that it's more efficient to read a narrow column than
a wide area. This is why newspapers have been organized in narrow
columns since decades. Your eye doesn't have to scan from left to right
then down but only down. Less chance to miss the line, easier to "grock"
the text, allow speed read. When Outlook moved to a 3 columns layout,
all its users (me included) raved about it.
Also, in the case of an e-mail app, this allows to display a longer list
of e-mails in the central area so you indeed don't feel the need to move
any splitter. This is arguably different in the case of a calendar.
