Okay, after talking to Grant some more, it seems that if the user is logged in, we can always put an email address in the byline, even if the user on the Chandler side hasn't filled out email account info.

Hmmm, what happens if a Chandler users fills out email account info AND has a sharing account that points to a different email address? Will we have dueling email accounts? I think this is another issue to flag for the Chandler user trying to use Cosmo...https:// bugzilla.osafoundation.org/show_bug.cgi?id=8108

Otherwise, for anonymous users, can we provide a Created by / Edited by / field that the user can fill out as either text or with an email address, if they are so inclined.

I believe, in Chandler, we're using email address to facilitate edit/update workflows. However, I could be making that up.
