I've encountered this problem also. I noticed that after evolution had been open for a while, it would slow down.
A quick look at System Monitor explained why. evolution-exchange-storage memory just kept climbing. It just kept going up and up. Eventually it got over 100 meg and I had to kill the process. Exchange e-mail account is the only mail account set up.
