You need a stanza like the following in gnome-default-applications.xml:
<terminal>
<_name>Konsole</_name>
<executable>konsole</executable>
<command>konsole</command>
<icon-name>konsole</icon-name>
<exec-flag>-e</exec-flag>
</terminal>
