This has nothing to do with the printer driver, it is a big usability
problem of Eye of GNOME and Evince. The driver provides info about all
printer properties including paper and CUPS moves this info correctly on
to the client. Most clients applications present this info correctly in
one printing dialog, like OpenOffice.org and all KDE applications. It is
a bad design of eog that you have to select the printer in "Printer
Setup" and "Print" and that the paper size is only selectable in
"Printer Setup" and not in print.
