I think I have the same problem. It started just after I did an upgrade (not fresh install) to Hardy Beta.
The color isn't quite black and white. If I go into the settings in totem and throw the hue all the way up and the brightness up a little it's about normal. This happens across mplayer, vlc, and totem for all video formats. The first time that I ran vlc from one of my dvd drives it was almost no color. Then when I ran totem it was the same. I changed the DVD to my second drive and it had normal color in totem, but playback was very poor so I ran VLC at which point it went back to bad color but played well. Then I changed the video settings in totem as described above and VLC played the color correctly afterwards.
