I have followed the instructions at http://wiki.ubuntu.com/DebuggingProgramCrash but I'm not sure how much use the debug files are going to be as when evolution freezes I have to click on X button to close it - I'm then given the option to force kill it.
The easiest way to reproduce the crash for me is to open up an email and then it Reply, the reply window opens and I can see the caret positioned in the window ready to type my text. The caret stops flashing almost immediately and at that point evolution becomes unresponsive.
