I'm not sure why the debug symbols wasn't there.. I probably went through the steps in your debugging-link a little bit to fast. Anyway, Evolution crashed in a user-perspective, as it exited while loading without giving any kind of feedback. The GDB backtrace indicates a Kerberos problem. Is evolution-data-server the process that connects to OWA?
The problem occured because my Windows-password (AD) was expired. When resetting it (from Windows), Evolution works normally again, and the gnome-panel doesn't freeze when clicking the "date/time/calendar"-item.
