AFAIK, file-roller isn't displayed by default in the menu because there
is no need to. (There is actually a launcher in the Accessories sub-
menu, but it is hidden by default).

Even without that launcher, there is no need to press Alt+F2 and run
"file-roller". Just right click on any file (or group of files) that you
want to archive, and select "Create archive" from the context menu.
