OK, so I close the session and find myself at the login screen. There I
move to change the language (Opciones > Seleccionar idioma) from the
last session's language to the default system one ("Último idioma" to
"Predeterminado del sistema"), and I get the following prompt:

"¿Desea reiniciar pantalla de entrada con el idioma eligido?
Reiniciará pantalla de entrada con la configuración regional Default"
(Approximate English translation:
"Do you want to restart the login screen with the chosen language?
This will restart the login screen with the regional language setting Default")

I decline, and enter my username and password. Before taking me into the
session, I get this prompt:

"¿Desea hacer que Español (México) (Español (México)) sea predeterminado para 
sesiones futuras?
Ha escogido Español (México) (Español (México)) para esta sesión, pero su 
configuración predeterminada es Español (Español)."
(Approximate English translation:
"Do you want to make Spanish (Mexico) (Spanish (Mexico)) the default language 
for future sessions?
You have chosen Spanish (Mexico) (Spanish (Mexico)) for this session, but your 
default setting is Spanish (Spanish)."

I choose to only use the the language for this session ("Sólo por esta
sesión"), and then I'm in. If I check the default language again as I
did at the beginning of this report, nothing has changed (it's still
"Español; Castellano (México)").

The chief question here is, why does my system call "Español; Castellano
(México)" the default language inside GNOME and "Español (Español)" at
the login prompt? Relatedly, why does it respond as though selecting the
default language is a language change at all? Finally, a subsidiary
concern: at the login prompt, why is "Español (México) (Español
(México))" not simply called "Español (México)"?
