I was able to reset the setting by re-pairing using a different host adapter (I guess HSP/HFP isn't compatible with the one I was using?), resetting the profile back to A2DP, then re-pairing with the first adapter again. But there should've been a way to reset the profile without needing to switch adapters - I'm lucky that worked at all.
