I have experimented further. It looks like BCC is filled out if I click on "New" or if I reply to an email by clicking the reply button. If I click on somebodys email address in a mail, a new mail window opens _without_ filling out BCC. For example, when pressing Reply to the mail Launchpad just sent me, Evolution opened the window I use now, everything is OK. If instead I click your email address in the Evolution pane showing the email, a new compose window opens without the BCC field filled in.
