You have been subscribed to a public bug:

If you copy text from firefox to another app, i.e. gedit, per Drag and Drop, it 
changes the umlauts.
(ö becomes ö, ä becomes ä and ü becomes ü)

However, if you copy and paste the text manually, it stays the way it
should be.

This bug does not only affect firefox, it also happens if you drag from
gnome-help to gedit, for instance.

Generally, it seems that dragging text between two "normal" apps works
fine, but dragging from html to plain text apps or even openoffice
breaks umlauts.

Sorry, if this description is not very good... I had a hard time finding the 
right words to describe my observations.
Especially the summary, if anyone has a better idea, please go ahead.
