I get exactly the same problem on 2 out of 3 PCs : a Dell D505 laptop
(P4 M and Intel chipset, on witch I cannot get any Compiz graphic
effect) and an AMD64 with Nvidia graphics (ful Compiz on).

Both use Gnome, and Human theme (any change won't do anything). Both are brand 
new install.
Screen resolution is 1024x768.
Language is French.

In full screen mode, the window is too large, and any click will make it swing 
from left to right, cutting either the side bar or the message pannel.
The only solution to get Evolution useful is to keep it in floating window mode.
