I've also tried unclutter and for me it's a good compromise.
1) in open office cursor disappear nearly immediately (between 1 or 2 seconds) 
and this is very very comfortable when typing. If you move the mouse or change 
current application (with alt+tab switcher or something else) mouse cursor 
reappear.
2) in firefox cursor disappear both when reading something and when typing (in 
awesome bar or search bar)
3) in gimp I've your behavior but for me it's not distracting because mouse 
disappear only if you don't use it for a little gap of time (2 seconds I think)

In my opinion unclutter it's a good application that enhance the user 
experience.
One possibility would be to have an option on system>preferences>mouse to 
enable or disable the "unclutter behavior", so any user can eventually change 
it. (Default beahvior unclutter on > mouse disappear after a little gap of time 
[eventually configurable in this window too])
