Ok, I got my gdm stable again. => in the /etc/gdm/custom.conf I added in the past manually some settings. More specific, I added two parameters:
IncludeAll=false Include=user1,user2,user3 (where user1,... where the users I wanted to be used by gdm to show in the login screen). At some point there was an issue in gdm that is was showing all users on the login screen. Apparently this got fixed at some point. I now excluded these two setting and now gdm is stable again. The issue is no longer happening. I can now run again Ubuntu for weeks without rebooting and having multiple users using it. In itself this issue is solved.
